Perfect as an appetizer or side dish, these smashed potatoes are sure to be a hit. The creamy and crunchy toppings take these potatoes to a new level of deliciousness.
Ingredients
Serves 6 2 pounds Medium red potatoes 2 Tablespoons butter 2 Tablespoons olive oil 6 slices prosciutto 1 cup creme fraiche 1/4 cup fresh chopped chives 1/4 cup fresh chopped dill Salt and pepper, to taste |
Instructions
Power levels referenced below are for induction cooktop.
1. Add potatoes to large pot filled with water and bring water to boil on level 9 (high heat).
2. Once water boils, reduce heat to power level 7 (medium high) and cook un,l potatoes for about 15 minutes or until potatoes are fork-tender. Timing will vary depending on the size of your potatoes.
3. While potatoes are boiling - make crispy prosciutto: heat skillet on medium high heat (power level 7). Add slices of prosciutto and fry until crispy. Remove from heat and set aside.
4. When potatoes are cooked, drain and rinse with cold water. Allow potatoes to cool.
5. Gently press on top of each potato until flat and smashed enough that it doesn’t break apart.
6. Heat large skillet on medium high heat (power level 7) and melt butter and olive oil. Generously season all sides of potatoes with salt and pepper.
7. Place smashed potatoes on skillet and fry on both sides un,l crispy.
8. Top crispy smashed potatoes with a dollop of creme fraiche, pieces of crispy prosciutto, chopped chives and dill.
9. Add additional salt and pepper, to personal taste.
