The fun part about this bar is that you can add any protein you want. Garlic shrimp is quick and easy but you can also add tofu, Vietnamese pork loaf or beef as additional proteins to make sure there’s something for everyone.

Serves 6

Peanut Dip

Ingredients

1/2 cup hoisin
1/2 cup water, or more if needed to thin the dip
1/4 cup peanut butter
2 Tablespoons rice vinegar
1/4 cup chopped peanuts
Chili garlic sauce or hot sauce
Pickled carrot/daikon (optional)


Garlic Shrimp

Ingredients

2 pounds raw shrimp, peeled and deveined.
2 Tablespoons olive oil
4 cloves garlic, minced or sliced
Salt and pepper, to taste


Spring Roll Bar Assembly

Ingredients

1 pound cooked shrimp (tofu, pork or beef)
1 head of lettuce
1 medium cucumber, sliced into thin strips
1 small bell pepper, sliced
2 cups of bean sprouts
Fresh herbs
Hot sauce, pickled carrots and daikon, chopped peanuts (optional)
20 - 8” rice paper sheets

Peanut Dip Instructions

1. Heat saucepan on medium heat. Add hoisin, water, peanut butter and rice vinegar.

2. Whisk until smooth. As dip warms, it will be softer and easier to whisk.

3. Once warmed and smooth, add additional water one Tablespoon at a time to thin the sauce to your desired consistency.

4. Serve in small dipping bowls and top with chopped peanuts, chili hot sauce, pickles.

Garlic Shrimp Instructions

1. Heat skillet to medium high heat. Add oil, then garlic. Cook garlic until translucent and fragrant.

2. Add shrimp and sear until pink or until cooked through.

3. Add salt and pepper, to taste and set aside and allow to cool.

Spring Roll Assembly Instructions

1. Make the dip and cook the shrimp and set aside.

2. Assemble the prepared spring roll bar assembly ingredients on platters or bowls: cooked proteins, dip and all the vegetables.

3. Provide a large bowl or rice paper dipping bowl for everyone to dip rice paper. Provide plates for everyone to lay their rice paper on.

4. Allow guests to assemble and gather their own customized choice of fillings so they can roll the spring rolls.

5. Give everyone a small dip bowl so they can create their own dip toppings for them to dip their spring rolls in.
