A zesty lemon cream sauce provides a fresh twist on fettucine. Paired with crispy-skinned seared salmon this makes an elegant but easy-to-prepare meal. Prepared on the Thermador® Freedom® or Liberty® induction cooktop, we can use two of our favorite time-saving features: PowerBoost® and PanBoost®. PowerBoost® provides a burst of power above level 9 to quickly boil a pot of water so that you can swiftly move on to the next step. PanBoost® increases heat above the maximum level for a 30 second interval to swiftly preheat a pan with oil before you sear the salmon. Our chefs use this feature anytime they are searing food in a hot pan – try it with steaks, chicken, veggies or seafood. Servings 4 Cooking Time: 25 Minutes Prep Time: 5 Minutes Ingredients: 1 pound fettucine 1 tablespoon butter 2 shallots, minced 1 ½ cup heavy cream 1 teaspoon grated lemon zest 3 tablespoons lemon juice ½ teaspoon kosher salt 1/8 teaspoon ground black pepper 4 (4-6oz) skin-on salmon filets 1 tablespoon vegetable oil Optional, for garnish: additional lemon zest or chopped chives, parsley or dill Instructions: Make the Pasta & Sauce 1. Place a large pot of salted water on the cooktop. Activate PowerBoost® by selecting the cooking zone for the pot location and selecting/touching the PowerBoost® symbol. 2. When the water is boiling, add pasta and cook according to package instructions. 3. Meanwhile, in a medium-sized pot, heat butter on level 6 until melted. Add shallots and cook, stirring, until tender, 3-4 minutes. 4. Add cream and lemon zest to the shallots and bring to a boil. Cook until slightly thickened, about 8 minutes. Remove from heat and stir in lemon juice, salt and pepper. 5. Drain pasta and add to the sauce, tossing to coat evenly. Sear Salmon Filets 1. Season salmon filets with salt and pepper. 2. Position a large sauté pan on either of the side zones of the cooktop and add oil. To preheat the pan and oil, select the cooking zone and activate the PanBoost® function (on Freedom® cooktops touch the PanBoost® symbol in the cooking zone display, on Liberty® cooktops, press PowerBoost® twice). After 30 seconds, the PanBoost® symbol will disappear, this indicates that preheating is complete. 3. Place the salmon filets in the preheated pan, skin side down and reduce heat to level 7. 4. After 5 minutes, carefully turn over each filet and reduce heat to level 4. 5. Cook an additional 2 minutes or until desired doneness (timing may vary based on thickness of the filets). To Serve: Place the finished salmon filets atop a bed of pasta and garnish with herbs or lemon zest, if desired. |
