How to Use the ExtraLow® Burners
ExtraLow® burners keep a consistent, low simmer, which prevents your food from burning or scorching. Depending on if you have a gas cooktop or rangetop your ExtraLow® burners have different settings. Watch the videos below to learn how to use the 5 levels on your gas cooktop or 2 levels on your range cooktop or rangetop.
Here's how to use the ExtraLow® burners:
1. Place your pot or pan on an ExtraLow® burner. When the control knob is set within an XLO setting, the flame cycles on and off automatically. This cycling is normal and allows simmering, poaching, melting, or keeping cooked food warm without scorching or burning.
2. Each XLO setting can be set by turning the appropriate control knob to the desired XLO setting. The higher the setting, the longer the flame will be turned on.
3. To vary the amount of low heat to suit the food and quantity, the control can be set anywhere within the XLO setting.
4. Make sure to stir the food occasionally especially if simmering for several hours.

- Levels 1-2 can be used for béchamel, cream based sauces, marinara melting butter, melting chocolate or polenta.
- Levels 3 can be used for very light braising.
- Levels 4-5 is best used when you want to keep hot foods hot like stir fry, poaching eggs, and scrambled eggs.

Rangetop & Range ExtraLow® Levels

- The lowest setting is good for delicate sauces like béchamel, cream based sauces, marinara, melting butter, melting chocolate or polenta.
- The high level is good to keep hot foods hot like stir fry, poaching eggs, and scrambled eggs.
Tips For Using ExtraLow® Burners
Here are some useful tips for using ExtraLow® burners:
- Check the food occasionally to see if the control knob should be turned to a lower or higher setting.
- While the flame is on, bubbling is normal. There should be at least steam and a slight quivering on the liquid’s surface.
- Use a lower XLO setting if the pan is covered.
- When lowering the flame setting, adjust it one XLO setting at a time.
- If the setting is too low to hold a simmer, bring the food back to a boil before resetting to a higher heat.
- If an oversized pan is used, simmering may occur more in the center. For even cooking, stir the food around the outer edges into the food in the center.
- The quantity and type of food affect which setting to use. Refer to your owner's manual to see a list of optimal XLO heat settings for various dishes.
