Here’s a great and elegant way to serve a salad. Put everything on a serving board! It’s a great way to have everything laid out and seen so your guests can pick and choose what they want to eat when they serve themselves. Serves 4 Ingredients For the dressing: • 1/4 cup olive oil • 1/4 cup balsamic vinegar • 2 cloves garlic, minced • Zest of 1 medium lemon • 2 Tablespoons fresh lemon juice • 1 Teaspoon soy sauce • 1 teaspoon honey • 1/2 teaspoon fresh cracked black pepper For the salad board: • 3 cups chopped lettuce, spinach or arugula • 8 ounces thinly sliced prosciutto, cut in half or smaller bite sized pieces • 1 pound figs, halved • 1 cup crumbled blue cheese • 1 (4.5 oz) wheel of brie, sliced • 1/2 cup chopped nuts |
Directions
1. Whisk or shake together all the dressing ingredients (olive oil, balsamic vinegar, garlic, lemon zest and juice, soy sauce, honey, and black pepper) and set aside.
2. On large serving platter or serving board, lay lettuce greens.
3. Layer prosciutto on top, then add figs, blue cheese, brie and nuts.
4. If serving later, store the platter in the fridge or wine column.
5. Before serving, shake the dressing to combine all ingredients. Then drizzle dressing over the salad before guests serve themselves.
